Keto Chocolate Avocado Mousse

Ingredients (Serves 2):

  • 1 ripe avocado
  • 3 tbsp unsweetened cocoa powder
  • 2-3 tbsp powdered erythritol (or monk fruit sweetener)
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 3 tbsp almond milk (unsweetened, or more for desired consistency)

Instructions:

  1. Scoop the avocado into a blender or food processor.
  2. Add cocoa powder, erythritol, vanilla extract, salt, and almond milk.
  3. Blend until smooth and creamy. Add more almond milk if needed for a mousse-like texture.
  4. Chill in the fridge for 15-20 minutes before serving.
  5. Optionally, top with keto whipped cream or a sprinkle of cacao nibs.
