- 3 tbsp almond flour
- 1 tbsp coconut flour
- 1 tbsp powdered erythritol
- 1/4 tsp baking powder
- 1 egg
- 2 tbsp unsweetened almond milk
- 1 tbsp melted butter
- 1/2 tsp lemon zest
- 1/2 tsp lemon juice
- Optional: Keto icing (powdered erythritol + a few drops of lemon juice)
Instructions:
- In a microwave-safe mug, whisk together almond flour, coconut flour, erythritol, and baking powder.
- Add the egg, almond milk, melted butter, lemon zest, and lemon juice. Mix until smooth.
- Microwave on high for 60-90 seconds, or until the cake has risen and set in the center.
- Allow to cool slightly and drizzle with keto icing if desired.
