Keto Lemon Mug Cake

Ingredients (Serves 1):

  • 3 tbsp almond flour
  • 1 tbsp coconut flour
  • 1 tbsp powdered erythritol
  • 1/4 tsp baking powder
  • 1 egg
  • 2 tbsp unsweetened almond milk
  • 1 tbsp melted butter
  • 1/2 tsp lemon zest
  • 1/2 tsp lemon juice
  • Optional: Keto icing (powdered erythritol + a few drops of lemon juice)

Instructions:

  1. In a microwave-safe mug, whisk together almond flour, coconut flour, erythritol, and baking powder.
  2. Add the egg, almond milk, melted butter, lemon zest, and lemon juice. Mix until smooth.
  3. Microwave on high for 60-90 seconds, or until the cake has risen and set in the center.
  4. Allow to cool slightly and drizzle with keto icing if desired.
