Ingredients:

  • 200g chicken breast, diced
  • 100ml coconut milk
  • 1 tablespoon coconut oil
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 teaspoon curry powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions:

  1. Heat coconut oil in a pan over medium heat. Add onions, garlic, and ginger. Sauté until aromatic and onions turn translucent.
  2. Add diced chicken and cook until it's no longer pink.
  3. Sprinkle curry powder, turmeric, and cumin powder over the chicken. Stir well to coat evenly.
  4. Pour in the coconut milk, reduce heat to a simmer, and let it cook for 10-15 minutes until the chicken is tender and the sauce thickens.
  5. Season with salt and pepper to taste. Garnish with fresh cilantro if desired.
